Cebu Lady Entrepreneur Shares Steps on How To Make Fishbone Chips From Subagyo

A lady entrepreneur in Bantayan Island, Cebu makes fishbone chips from filefish or locally known as Subagyo.

The Bantayan Island in Cebu is not only popular as a tourist destination but also known as a home of ‘Buwad’ or dried fish. The coastal area contains abundant amount of marine creatures like filefish or ‘Subagyo’.

Filefish is very popular in the town, which is used to make fish tapa. The fishbones of Subagyo were also used to create chips.

A mamukyaray or dried fish producer named Ethel Lumacang has shared her idea of making fishbone chips. Her family is a supplier of dried fish in the local market and started making fish tapa since her highschool days.

Ethel’s father has been dismissed from his job, so their family decided start a dried fish business.  She is selling fish tapa for P600 per kilogram and P300 per kilo of fishbones.

The family receives a massive amount of order from their customers every December until summer. The woman is waking up early in the morning to deliver the orders of her ‘Suki’ or customers.

The lady entrepreneur has also shared on how to make fish tapa and fish bone chips.

  • Remove the fish head and tails before peeling the skin
  • Separate the flesh from bone
  • Wash it
  • Season the fish meat and bones
  • For fish tapa, place the meat in a circular container before exposing it to the sun
  • The product is ready to sell

Most people were just frying the fish tapa but some can cook it based on their own preference. Ethel finished her college but chooses to manage their family business.
