Undeniably, one of the dishes that the Filipino people are known of is “Paksiw”. You can cook it with either of the pork or the fish as the main ingredient.
With regards to cooking “Paksiw” with pork as the main ingredient, usually Pinoys use left-overs of a roasted pork. It is a favorite of many people and a lot of Filipinos really keep some of the roasted pork for it.

Based on Kawaling Pinoy, here is a recipe containing a guide on how to cook Lechon Paksiw and the ingredients that you need to prepare for the cooking session:
What To Prepare:
- 1 tablespoon oil
- 1 large onion, peeled and sliced thinly
- 1 head garlic, peeled and minced
- ¾ cup vinegar
- 2 cups water
- 2 cups (homemade or store-bought) lechon sauce
- ¾ cup brown sugar
- 2 to 3 pounds (about 4 cups) leftover lechon or lechon kawali,
- 3 bay leaves
- ½ cup liver spread
- salt and pepper to taste
How To Cook Lechon Paksiw:
Step 1 – Add oil in a pot over a medium heat and then add the garlic and onions. Cook it until limp.
Step 2 – Add vinger in the pot and wait for it to boil. Uncover the pot for three(3) to five(5) minutes. Do not stir it.
Step 3 – Pour the Lechon Sauce and the sugar and then mix them.
Step 4 – Add the bay leaves and the pork.
Step 5 – Lower the heat below the pot and then put back the cover. Continue to cook it for 15-20 minutes more until the meat is tender.
Step 6 – Based on the recipe, you may add water in 1/2 cup increments based on what is needed.
Step 7 – Add the liver spread and then stir it. Season your Lechon Paksiw with pepper and salt and then continue cooking it for 8-10 minutes more until the sauce becomes thick.
