Filipino Chef “Mavis Soliven” Might Join Young Talents 2017
A 24-year-old Filipino chef named Mavis Soliven might have a big possibility to join Young Talents Escoffier to be held in September 2017.
Mavis Soliven has showcased her masterpiece for a possibility to be included on the Young Talents Escoffier or known as Disciples Escoffier Young Talent Trophy, which will be held in Hongkong.
The competition involves 8 Asian chefs aging 24-year-old and below representing their own countries such as the Philippines, Thailand, China, Singapore, Vietnam, South Korea, Macau, and Hong Kong. The winner will represent its nation in the global final, which will be held in France.
Chef Mavis was featured by Epicurean Dinner, which makes Grand Bistro concluded that the 24-year-old Pinay chef can make it to the competition due to her best creation.
The Filipina chef has served five courses, which reflects a significant moment in her life since she made her first dish up to her internship. “From the time that I made my first-ever scrambled egg at the age of 10, to my internship in France, [I always inject] my Zamboanga roots,” said by Mavis quoted by Esquiremag.
The first dish she served was a Baguette Parfumée with balsamic, vinaigrette, parmesan, and sundried tomatoes. The second course was scallop on a bed of vanilla cream and celeriac puree with a dash of caviar.
The thirds dish was Egg Yolk Bottarga, which is a cured egg yolk sandwiched between a swath of choron sauce on the top and creamy cauliflower at the bottom. The next course was a salmon coated with coconut ash, dill, apple, and macopa.
The fifth dish was a rump steak and the sixth dish was a cheese board made up of Davao blue cheese with pink peppercorn, mango, and langka. The dessert was a Deconstructed Black Forest with strawberry spherification and cocoa soil.
The Pinay chef has shown her skill through flavorful dishes and telling stories.
