- 1.5 lb. skinless chicken thigh
- 1.88 cups long grain rice
- 1.5 Knorr chicken cube
- 1.13 cups chopped scallions
- 3 teaspoons Sesame oil
- 4.5 thumbs ginger in thin strips
- 10.5 to 15 cups water
- 3 tablespoons toasted garlic, optional
- salt and ground black pepper to taste
Now that the ingredients are ready, you can start with the process on how to cook Chicken Congee. Here are the steps that you may follow:
Step 1
Add water in a cooking pot and heat it. Add chicken, ginger, and half of the chopped scallions in the pot and let it boil.
Step 2
Add Chicken Knorr Cube. Stir it well until the chicken cube has dissolved. Cover the pot and continue cooking it over medium heat for 15 minutes.
Step 3
Take the chicken from the pot and let it cool down so you can shred the chicken meat using your hands or two (2) forks. Make sure to discard the bones.
Step 4
Add rice into the cooking pot and then cover it to cook it for around half an hour. Afterwards, add the shredded chicken into the pot and continue cooking it for 30 minutes more until your desired consistency for the porridge is achieved.
Step 5
Add ground black pepper, salt, and sesame oil and stir it. Your delicious Chicken Congee is ready. You can transfer it into a serving bowl.
