- 1 (3 pound) chicken, cut into pieces
- 2 tablespoons vegetable oil
- 2 tablespoons minced garlic
- 1 large onion, quartered and sliced
- ⅓ cup white vinegar
- ⅔ cup low sodium soy sauce
- 2 teaspoons black pepper
- 1 tablespoon garlic powder
- 1 bay leaf
The other part of our chicken adobo recipe is the cooking process. The cooking time may take around 45 minutes. Here are the steps in cooking this all-time favorite dish of many Filipino people:
Step 1
Put a large skillet on top of medium-high heat and add vegetable oil to heat it. Add the chicken to cook it for around two (2) to three (3) minutes each side. Afterwards, transfer the chicken pieces to a plate and set it aside for a while.
Step 2
Add the quartered and sliced onion and the minced garlic to the skillet. Cook until the onion and garlic turns brown and soft. It may take around six (6) minutes.
Step 3
Add the soy sauce and vinegar to the skillet and season the mixture with black pepper, garlic powder, and bay leaf.
Step 4
Return the chicken pieces to the pan, increase heat to high, and bring it to boil. Reduce your heat to medium-low, cover, and allow it to simmer until the chicken pieces is cooked and tender. It may take around 35 to 40 miunutes.
Step 5
Transfer your cooked Chicken Adobo to a bowl and you can now serve it with steamed rice.
