LORE MANILA – Lore by Chef Tatung Sarthou is located in the Bonifacio Global City and here are some details about this place.

Chef Tatung Sarthou says “Lore is a celebration of how far Filipino culinary history has evolved over the centuries”. And this place is indeed a reflection of how far the culinary in the Philippines has come and how much it’s changed.

Found in the heart of Bonifacio Global City, this FIlipino fine dining “proposes to synthesize the global Filipino culinary experience through a menu that is inspired by traditional ingredients and cooking techniques, yet simultaneously acknowledges the creativity of Philippine chefs who have pushed the cuisine forward.”

This place boasts its 10-course menu which is served at lunch and dinner. This course starts light being served with Kinilaw of fresh tuna, sea urchin, and pickled pineapple, a prawn quekiam camaron, and a seafood fresh lumpia with jicama, herbs, and a white peanut sauce.

The proceeding meals is a progression of textures: smoked hamachi and a seared scallop served with a “pipian” sauce made of almonds, spinach, and green tomatoes, a Filipino charcuterie platter of cold chicken galantine, liver pate, and a calamansi mostarda, and then a seared duck breast in a tsokolate sauce.

Its calamansi sorbet has a touch of bagoong and a sprinkle of chili salt.

The last two are composed of turmeric-infused bringhe with adlai grains and generous piece of foie gras on top and stewed beef in two types of coconut sauces: burnt coconut and white coconut gravy.

To end this course is a classic mango jubilee dessert.

Lunch 11 am to 3 pm
Dinner 6 pm to 11 pm

This place actually has five-, seven- or 10-course tasting menus ranging from Php 2,600.00 to Pho 4,800.00.
