Have you ever wondered about its origin story? According to Chester Cabalza, an anthropologist, ice candy has its roots in the American colonial period.

It is said that the Americans introduced the refrigerator or “frigider,” and the concept of “sari-sari” stores, which paved the way for the sale of ice candy and ice itself. Ice candy might have been based on ice pop, which was introduced by the Americans.

An 11-year-old Frank Epperson accidentally discovered ice pop in 1905, resulting from leaving a glass of water with soda powder outdoors. It froze due to the low temperature, with the stirrer remaining inside.

Epperson later called it the “epsicle.” Interestingly, the first ice cream shop in the Philippines was established by Metcalfe A. Clarke in 1899, located in Plaza Moraga in Escolta. During the 1920s, ice cream became a symbol of status, as only wealthy individuals could afford refrigerators, making it an exclusive indulgence.
